Hey Reader,

Okay, I’ve made a lot of pancakes in my life, and these might be the fluffiest ones yet! My new Greek yogurt pancakes are tall and pillowy in a way that feels like a diner made them, except they come together in one bowl with a whisk (so no mixer and no whipping egg whites at 8am!)

The Greek yogurt is what makes them so fluffy, which means there's real protein in them, and nobody's back in the kitchen an hour later. They freeze beautifully too, which is how they end up in the toaster on school mornings around our house most days lately.

I hope they become your favorite pancakes too!
